I recently picked the first of our ironbark pumpkins and when we ate it, it had a real chalky/flowery taste that I have not tasted before in bought ironbarks. Does anyone have any experience or advice for this taste?

I'd suspect not enough water when it was developing. Pumpkins are gross drinkers
    when developing fruits.
